Homemade Yeast leads to a marvellous aromatic Profile

In spring 2008 the new yeast cellar was put into operation and therewith the production of the own Fohrenburger wheat beer at the headquarters in Bludenz began. The Fohrenburger wheat beer is the only real wheat beer from Vorarlberg and received the golden DLG-medal in 2010.

The yeast for our beers is, in the truest sense of the word,"homemade" in our own pure culture system. In our pure culture system we grow bottom-fermented as well as top-fermented yeast strains, which give our beer a very unique flavour.

Yeasts are single-celled microorganisms, which belong to the family of fungus. They function as motor for the alcoholic fermentation. There are numerous yeast strains, which are hallmarked by characteristic metabolic processes. Yeast serves the purpose to ferment the malt sugar. Therefore yeast is responsible for the development of alcohol, the carbonation and various flavouring components.
