Brewing

The pre-wort is boiled for one hour in the brewing pot and is reduced to the necessary original wort. The brewmaster adds the third important ingredient, the fine aroma hops, to the brew with a lot of care. The quantity and the mixture of hops are a well-kept secret and are responsible for the flavour and the bitterness. At the end of the boiling the brew is spindled, to control the cooking process.

What is original wort?

Original wort is the valuable part of the beer wort, consisting of dissolved substances of malt and hops. This extract mainly contains maltose, proteins, vitamins, trace elements as well as flavour and bitter substances of the hops.

The rule of thumb is: original wort / 3 = alcohol content of the beer (weight per cent)
